About the Role:
The Sous Chef plays a pivotal role in the daily operations of the kitchen. Key Responsibilities:
As the Sous Chef, your duties will be both hands-on and managerial, making it a well-rounded role with plenty of challenges and growth opportunities. You will be expected to:
- Lead the Kitchen Team: In the absence of the Head Chef, you’ll be responsible for managing the kitchen, ensuring a smooth service, and maintaining high standards of food quality and presentation.
- Training and Mentorship: Provide guidance, training, and feedback to junior kitchen staff, including line cooks, prep cooks, and kitchen assistants. Ensure that each team member adheres to the restaurant’s standards of excellence.
- Menu Preparation and Innovation: Collaborate with the Head Chef to develop new dishes and ensure the menu stays fresh and exciting. Use your creativity to introduce new flavor combinations and cooking techniques.
- Inventory Management: Oversee the kitchen’s stock of ingredients, ensuring optimal levels of all items, especially during peak service hours. Implement a first-in, first-out (FIFO) system to minimize food waste and ensure freshness.
- Quality Assurance: Ensure that every dish is plated to perfection and meets the restaurant’s standards before leaving the kitchen. Maintain the cleanliness and organization of the kitchen at all times.
- Health & Safety Compliance: Ensure that all kitchen operations comply with health and safety regulations. This includes managing food hygiene and proper sanitation procedures, as well as ensuring equipment is in working order.
Qualifications and Skills Required:
The right candidate for this Sous Chef role will possess the following qualifications and attributes:
- Culinary Diploma: A formal culinary qualification is essential, providing a strong foundation in culinary skills and kitchen management.
- Experience: Ideally, 4+ years in a senior chef position within a high-end restaurant environment. Previous leadership experience in a fast-paced, high-pressure kitchen is highly desirable.
